The organic aquaculture shrimp featured are hatched, raised, fed and packaged under strict environmentally friendly guidelines. The resource is totally renewable and operates in a closed production cycle with no additional collection of wild larvae necessary. The entire process is carried out by EXPALSA in Guayaquil, Ecuador and is certified by Naturland E.V. in Germany, and QCS, a USDA and ISO-65 compliant organic certification program.
Sustainable resources
The sustainable wild caught seafood featured is certified by the Marine Stewardship Council (MSC). MSC is an independent non profit organization based in London, England. A certified fishery involves close monitoring of harvest quantities coupled with the reproductive science of the species along with the impact on the fishery and the marine ecosystem. These steps assure a resource available for many future generations.

In both the organic aquaculture and sustainable wild fisheries paramount attention is paid and specialized techniques are utilized to have only minimal short term impact on the surrounding environment.
Environmental restoration
The organic shrimp farm inventories and monitors the surrounding flora and fauna. There are two separate reforestation programs in place and today the mangroves in the area have been restored to levels comparable to the area in the 1950’s.
